Ingredients

- 2 cups pasta (bow tie, rotini, or whole wheat)
- 1 cup fresh herbs (basil, parsley, chives, dill)
- 1 medium avocado, diced
- Juice of 1 lemon
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1 bell pepper, diced
- Optional: Grated Parmesan cheese or sliced almonds
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
- In a blender or food processor, combine fresh herbs, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth.
- Chop the veggies into bite-sized pieces.
- In a large bowl, combine cooled pasta, chopped veggies, and diced avocado; mix gently.
- Drizzle the dressing over the salad and toss until evenly coated.
- Chill in the fridge for at least 30 minutes before serving.
- Before serving, taste and adjust seasoning with more lemon or cheese if desired.
Notes
Letting the salad chill allows flavors to meld. Rinse pasta well to maintain al dente texture.
