Ingredients

  • 2 cups pasta (bow tie, rotini, or whole wheat)
  • 1 cup fresh herbs (basil, parsley, chives, dill)
  • 1 medium avocado, diced
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1 bell pepper, diced
  • Optional: Grated Parmesan cheese or sliced almonds

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
  2. In a blender or food processor, combine fresh herbs, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth.
  3. Chop the veggies into bite-sized pieces.
  4. In a large bowl, combine cooled pasta, chopped veggies, and diced avocado; mix gently.
  5. Drizzle the dressing over the salad and toss until evenly coated.
  6. Chill in the fridge for at least 30 minutes before serving.
  7. Before serving, taste and adjust seasoning with more lemon or cheese if desired.

Letting the salad chill allows flavors to meld. Rinse pasta well to maintain al dente texture.
