Ingredients

- 1 lb large raw shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup fresh corn off the cob
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 shallot, minced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: 1 diced jalapeño for heat
Instructions
- Preheat the grill to medium-high heat.
- Toss shrimp in olive oil, salt, pepper, and smoked paprika; marinate for 10-15 minutes.
- Grill shrimp for 2-3 minutes on each side until pink and curled.
- Chop avocados, tomatoes, and corn while shrimp is grilling.
- In a large bowl, combine grilled shrimp, avocado, corn, tomatoes, and cilantro.
- Drizzle with lime juice and additional olive oil; season with salt and pepper.
- Toss gently to combine and serve with tortilla chips or in tacos.
Notes
Serve with tortilla chips or over greens. For added indulgence, substitute shrimp with crab meat.
