Ingredients

  • 2 ripe avocados, diced
  • 1 cup fresh corn off the cob
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 1 diced jalapeño for heat

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss shrimp in olive oil, salt, pepper, and smoked paprika; marinate for 10-15 minutes.
  3. Grill shrimp for 2-3 minutes on each side until pink and curled.
  4. Chop avocados, tomatoes, and corn while shrimp is grilling.
  5. In a large bowl, combine grilled shrimp, avocado, corn, tomatoes, and cilantro.
  6. Drizzle with lime juice and additional olive oil; season with salt and pepper.
  7. Toss gently to combine and serve with tortilla chips or in tacos.
