Ingredients

  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp mint extract or matcha powder
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and line a jelly roll pan with parchment paper.
  2. Beat the eggs and sugar together until the mixture doubles in volume, about 5-7 minutes.
  3. Fold in the flour, baking powder, salt, and mint extract or matcha gently.
  4. Spread the batter evenly in the pan and bake for 12-15 minutes until springy.
  5. Prepare a clean kitchen towel dusted with powdered sugar.
  6. Roll the hot cake (with parchment) from one short side into a tight log and cool completely in this position.
  7. Beat the cream cheese, powdered sugar, and whipped cream until smooth for the filling.
  8. Unroll the cooled cake, spread the filling, and reroll without parchment. Wrap tightly and refrigerate for at least an hour.
  9. Dust with powdered sugar before serving.
