- 1 tsp mint extract or matcha powder
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
Instructions
- Preheat your oven to 375°F (190°C). Grease and line a jelly roll pan with parchment paper.
- Beat the eggs and sugar together until the mixture doubles in volume, about 5-7 minutes.
- Fold in the flour, baking powder, salt, and mint extract or matcha gently.
- Spread the batter evenly in the pan and bake for 12-15 minutes until springy.
- Prepare a clean kitchen towel dusted with powdered sugar.
- Roll the hot cake (with parchment) from one short side into a tight log and cool completely in this position.
- Beat the cream cheese, powdered sugar, and whipped cream until smooth for the filling.
- Unroll the cooled cake, spread the filling, and reroll without parchment. Wrap tightly and refrigerate for at least an hour.
- Dust with powdered sugar before serving.
