Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until it resembles wet sand.
- Press the mixture firmly into the bottoms of a mini muffin tin or silicone molds to create your crust.
- Bake the crust for 5-7 minutes and allow it to cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and mix until combined.
- Add the vanilla extract and green food coloring, mixing until the desired shade is reached.
- Spoon or pipe the cheesecake filling into each prepared crust, smoothing the top.
- Chill in the refrigerator for at least 3-4 hours, or until set.
- Decorate with toppings such as melted chocolate or crushed candy canes.
