Ingredients

  • Mint extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy, about 3 minutes.
  3. Add the eggs one at a time, followed by vanilla extract, and mix well.
  4. In a separate bowl, combine flour, baking soda, and salt, then gradually mix into the wet ingredients until just combined.
  5. Add green food coloring to the dough until desired hue is reached.
  6. Drop rounded tablespoons of dough onto the baking sheet, spacing them apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
  9. Decorate with icing and sprinkles as desired.
