Ingredients
- Boneless, skinless chicken breasts or thighs
- Brown rice or white rice
- Chicken or vegetable broth (low-sodium)
- Chopped carrots
- Frozen peas
- Bell peppers
- Greek yogurt or low-fat sour cream
- Chopped garlic
- Chopped onion
- Fresh thyme or rosemary
- Salt, pepper, and paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken with salt, pepper, and herbs, then sauté in olive oil for 5-7 minutes until lightly golden.
- Add chopped onions and minced garlic to the pan and cook until translucent.
- In a bowl, combine sautéed chicken, rice, vegetables, broth, and creamy element.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Cover with aluminum foil and bake for 25 minutes, then remove foil and bake for an additional 15-20 minutes.
