- 2 lbs beef tips (chuck or sirloin)
- 4 cups beef broth
- 2 yellow onions, chopped
- 4 cloves garlic, minced
- 8 oz button or cremini mushrooms, sliced
- 3 carrots, sliced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tbsp fresh parsley, chopped
- 2 tbsp soy sauce
- 2 tbsp cornstarch
- 2 tbsp oil or butter
Instructions
- Heat a skillet over medium-high heat and add oil or butter. Sear the beef tips on all sides until golden, about 3-4 minutes.
- Add chopped onions and minced garlic to the skillet, sauté until softened, about 3 minutes.
- Transfer the beef and onions to the crock pot. Add carrots, mushrooms, and any other desired vegetables.
- In a bowl, mix together the beef broth, soy sauce, thyme, and rosemary. Pour over the beef and veggies.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Mix cornstarch with cold water to create a slurry. Stir into the gravy in the crock pot and let thicken for 15-20 minutes.
- Season to taste with salt and pepper, then serve garnished with fresh parsley.
