Ingredients

  • 4 bone-in chicken thighs or legs
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon turmeric
  • 1 tablespoon paprika
  • 2 teaspoons garam masala
  • Salt to taste
  • 2 tablespoons cooking oil

Instructions

  1. In a large bowl, combine yogurt, lemon juice, garlic, ginger, and spices to form a smooth marinade.
  2. Pat chicken dry and make shallow cuts in the flesh.
  3. Add chicken to the marinade, coating evenly. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.
  4. Preheat grill or oven at high heat.
  5. Cook chicken on grill grates or a foil-lined baking sheet for 25-30 minutes, turning occasionally, or bake at 450°F (230°C) for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Let chicken rest for a few minutes before serving with lemon slices and fresh herbs.

Notes

For best flavor, marinate overnight and ensure the chicken is cooked at high heat for crispy edges.
