- 4 bone-in chicken thighs or legs
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 tablespoon turmeric
- 1 tablespoon paprika
- 2 teaspoons garam masala
- Salt to taste
- 2 tablespoons cooking oil
Instructions
- In a large bowl, combine yogurt, lemon juice, garlic, ginger, and spices to form a smooth marinade.
- Pat chicken dry and make shallow cuts in the flesh.
- Add chicken to the marinade, coating evenly. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.
- Preheat grill or oven at high heat.
- Cook chicken on grill grates or a foil-lined baking sheet for 25-30 minutes, turning occasionally, or bake at 450°F (230°C) for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Let chicken rest for a few minutes before serving with lemon slices and fresh herbs.
Notes
For best flavor, marinate overnight and ensure the chicken is cooked at high heat for crispy edges.
