Description

A comforting and nostalgic dish featuring sweet corn and honey, perfect for family gatherings.

Ingredients

Scale
  • 2 cups corn (fresh or frozen)
  • ½ cup honey
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 2 eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Optional: Smoked paprika, fresh herbs (like thyme or rosemary)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add chopped onions and minced garlic, sauté until translucent (about 3-5 minutes).
  3. In a mixing bowl, combine corn, sautéed onion and garlic, honey, and heavy cream. Mix until evenly coated.
  4. Whisk together the eggs and add to the corn mixture. Season with salt and pepper, adding smoked paprika or fresh herbs if desired.
  5. Pour into a greased baking dish and dot the top with butter pieces.
  6. Bake for 40-45 minutes, until the top is golden brown. Cover with foil if necessary to prevent over-browning.
  7. Let sit for a few minutes before serving.

Notes

Ensure not to overbake to keep the casserole moist. Quality ingredients will enhance the flavor.
