Ingredients

  • 2 tablespoons Dijon mustard
  • Juice of 1 lemon

  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup toasted pecans or walnuts

Instructions

  1. Season the chicken with salt, pepper, paprika, and cayenne. Sauté in a hot skillet with olive oil for about 6-8 minutes until golden and cooked through. Rest before slicing.
  2. For the dressing, whisk together honey, mustard, and lemon juice in a bowl.
  3. In a large bowl, combine greens and diced vegetables.
  4. Once the chicken has cooled, slice and toss it with the salad.
