- 2 boneless chicken breasts (or thighs)
- 1/4 cup local honey
- 2 tablespoons Dijon mustard
- Juice of 1 lemon
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 4 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 cucumber, diced
- 1/2 cup toasted pecans or walnuts
Instructions
- Season the chicken with salt, pepper, paprika, and cayenne. Sauté in a hot skillet with olive oil for about 6-8 minutes until golden and cooked through. Rest before slicing.
- For the dressing, whisk together honey, mustard, and lemon juice in a bowl.
- In a large bowl, combine greens and diced vegetables.
- Once the chicken has cooled, slice and toss it with the salad.
- Pour the dressing over the salad and toss until well coated.
- Top with toasted nuts and serve immediately or allow to chill for an hour.
