  • 2 lbs Beef (Chuck or Brisket), well-marbled
  • 3 tbsp Hungarian sweet paprika
  • 2 medium Yellow onions, chopped
  • 4 cloves Garlic, minced
  • 2 Bell peppers, diced (variety of colors)
  • 2 medium Carrots, diced
  • 2 Tomatoes, diced or 1 can of diced tomatoes
  • 4 cups Beef broth
  • Fresh herbs (e.g., Dill or Parsley) for garnish

Instructions

  1. In a large pot or Dutch oven, heat a splash of oil over medium heat. Sauté the chopped onions until translucent, about 5–7 minutes. Add minced garlic and sauté for another minute until fragrant.
  2. Increase heat to medium-high and add beef chunks. Brown the meat on all sides for maximum flavor.
  3. Once meat is browned, sprinkle in the paprika and stir to coat the meat in the oil.
  4. Add diced bell peppers, carrots, and tomatoes. Pour in beef broth and a splash of water. Bring to a gentle boil, then reduce heat to low.
  5. Cover the pot and let it simmer for 90 minutes to 2 hours until the beef is fork-tender.
  6. Taste and adjust seasoning. Stir in fresh herbs right before serving. Serve over noodles, rice, or with crusty bread.

Notes

For a deeper flavor, allow the dish to cool and refrigerate overnight before reheating. It also freezes well for later enjoyment.
