- 2 lbs Beef (Chuck or Brisket), well-marbled
- 3 tbsp Hungarian sweet paprika
- 2 medium Yellow onions, chopped
- 4 cloves Garlic, minced
- 2 Bell peppers, diced (variety of colors)
- 2 medium Carrots, diced
- 2 Tomatoes, diced or 1 can of diced tomatoes
- 4 cups Beef broth
- Fresh herbs (e.g., Dill or Parsley) for garnish
Instructions
- In a large pot or Dutch oven, heat a splash of oil over medium heat. Sauté the chopped onions until translucent, about 5–7 minutes. Add minced garlic and sauté for another minute until fragrant.
- Increase heat to medium-high and add beef chunks. Brown the meat on all sides for maximum flavor.
- Once meat is browned, sprinkle in the paprika and stir to coat the meat in the oil.
- Add diced bell peppers, carrots, and tomatoes. Pour in beef broth and a splash of water. Bring to a gentle boil, then reduce heat to low.
- Cover the pot and let it simmer for 90 minutes to 2 hours until the beef is fork-tender.
- Taste and adjust seasoning. Stir in fresh herbs right before serving. Serve over noodles, rice, or with crusty bread.
Notes
For a deeper flavor, allow the dish to cool and refrigerate overnight before reheating. It also freezes well for later enjoyment.
