Description

Ingredients

  • 2 lbs beef (chuck or stew meat), diced
  • 2 tablespoons Hungarian sweet paprika
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced (Yukon Gold or russets)
  • 4 cups low-sodium beef broth
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Prepare the ingredients: Chop onions, mince garlic, dice beef, and chop carrots and potatoes.
  2. Sauté the onions in hot olive oil for about 5 minutes until translucent.
  3. Add garlic and beef, season with salt and pepper, and brown the beef for 5–7 minutes.
  4. Stir in paprika for 30 seconds to release its oils.
  5. Pour in beef broth and add carrots and potatoes, bring to a gentle boil.
  6. Reduce heat to low, cover, and simmer for 1 hour.
  7. Taste and adjust seasoning; simmer uncovered if sauce is too thin.
  8. Serve hot, garnished with fresh herbs, alongside crusty bread or egg noodles.

Notes

For a vegetarian version, substitute beef with firm tofu and use vegetable broth. Add bell peppers or peas for extra taste.
