- 2 lbs beef (chuck or stew meat), diced
- 2 tablespoons Hungarian sweet paprika
- 2 large onions, chopped
- 4 cloves garlic, minced
- 3 carrots, sliced
- 2 potatoes, diced (Yukon Gold or russets)
- 4 cups low-sodium beef broth
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh herbs (parsley or thyme) for garnish
Instructions
- Prepare the ingredients: Chop onions, mince garlic, dice beef, and chop carrots and potatoes.
- Sauté the onions in hot olive oil for about 5 minutes until translucent.
- Add garlic and beef, season with salt and pepper, and brown the beef for 5–7 minutes.
- Stir in paprika for 30 seconds to release its oils.
- Pour in beef broth and add carrots and potatoes, bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 1 hour.
- Taste and adjust seasoning; simmer uncovered if sauce is too thin.
- Serve hot, garnished with fresh herbs, alongside crusty bread or egg noodles.
Notes
For a vegetarian version, substitute beef with firm tofu and use vegetable broth. Add bell peppers or peas for extra taste.
