- 2 cups boneless, skinless chicken (breast or thighs), diced
- 1 cup mushrooms (button and cremini), sliced
- 1 cup broccoli or cauliflower florets
- 1 cup shredded cheddar or mozzarella cheese
- 1/2 cup heavy cream or sour cream
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) for garnish
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with cooking spray.
- Melt butter in a skillet over medium heat. Add minced garlic and chopped onion, sauté for 4 minutes.
- Add sliced mushrooms and cook until tender.
- Season diced chicken with salt, pepper, and herbs, then add to the skillet, cooking for 5-7 minutes until cooked through.
- In a mixing bowl, combine the chicken, mushrooms, vegetables, cream, and half of the cheese.
- Pour into the baking dish and top with remaining cheese.
- Bake for 25-30 minutes until cheese is golden brown.
- Allow to cool slightly and serve warm with fresh herbs on top.
Notes
Experiment with different vegetables and cheeses. Ensure not to overcook the chicken to keep it tender.
