Ingredients

  • 2 cups boneless, skinless chicken (breast or thighs), diced
  • 1 cup mushrooms (button and cremini), sliced
  • 1 cup broccoli or cauliflower florets
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 cup heavy cream or sour cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with cooking spray.
  2. Melt butter in a skillet over medium heat. Add minced garlic and chopped onion, sauté for 4 minutes.
  3. Add sliced mushrooms and cook until tender.
  4. Season diced chicken with salt, pepper, and herbs, then add to the skillet, cooking for 5-7 minutes until cooked through.
  5. In a mixing bowl, combine the chicken, mushrooms, vegetables, cream, and half of the cheese.
  6. Pour into the baking dish and top with remaining cheese.
  7. Bake for 25-30 minutes until cheese is golden brown.
  8. Allow to cool slightly and serve warm with fresh herbs on top.
