Ingredients
- Italian sausage (mild or spicy)
- Potatoes (Yukon Gold or Russets)
- Onions (yellow or white)
- Garlic (fresh minced)
- Bell peppers (red or yellow)
- Fresh rosemary
- Fresh thyme
- Fresh parsley
- Cheese (sharp cheddar, mozzarella, or Parmesan)
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish with olive oil.
- In a skillet over medium heat, sauté sliced Italian sausage until fully cooked, brown, and fragrant. Remove and set aside.
- In the same skillet, cook chopped onions and minced garlic until the onions are translucent. Add bell peppers and cook for an additional 2-3 minutes.
- Slice the potatoes thinly while the vegetables are cooking.
- In a large mixing bowl, combine the sausage, sautéed vegetables, sliced potatoes, herbs, salt, and pepper. Stir until everything is evenly coated.
- Pour half of the mixture into the casserole dish, sprinkle a layer of cheese on top, and add the remaining mixture. Top with more cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 20 minutes, or until the top is golden brown and bubbling.
- Allow the casserole to rest for a few minutes before serving and garnish with fresh parsley.
