  • 1/2 cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, chopped
  • 1/4 cup cream (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a bowl, mix flour, baking powder, cinnamon, and sugars.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Gradually combine wet and dry ingredients, folding in gently.
  5. Fold in chopped peaches evenly into the batter.
  6. Fill muffin cups about ¾ full with batter.
  7. For the caramel sauce, melt butter with brown sugar and cream over low heat; drizzle over muffin batter.
  8. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  9. Allow to cool for a few minutes before serving warm.
