Ingredients

  • 4 lamb chops (rib or loin)
  • 2 tablespoons Dijon mustard
  • 2 teaspoons fresh thyme (or dried thyme)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Prepare the chops by letting them come to room temperature for 30 minutes.
  2. Season each chop with salt and black pepper.
  3. In a skillet over medium-high heat, add olive oil and sear the lamb chops for 3-4 minutes on each side until golden brown.
  4. Remove chops and set aside. In the same skillet, lower heat and add minced garlic, sautéing until fragrant.
  5. Add Dijon mustard and thyme; stir for 1 minute. Pour in heavy cream and let it simmer until thickened.
  6. Return lamb chops to skillet, coating them in the sauce and cook for an additional minute.
  7. Plate and drizzle with extra sauce before serving.

Notes

To avoid overcooking, aim for an internal temperature of 145°F for medium-rare. Let the chops rest for 5 minutes before serving.
