- 4 lamb chops (rib or loin)
- 2 tablespoons Dijon mustard
- 2 teaspoons fresh thyme (or dried thyme)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Prepare the chops by letting them come to room temperature for 30 minutes.
- Season each chop with salt and black pepper.
- In a skillet over medium-high heat, add olive oil and sear the lamb chops for 3-4 minutes on each side until golden brown.
- Remove chops and set aside. In the same skillet, lower heat and add minced garlic, sautéing until fragrant.
- Add Dijon mustard and thyme; stir for 1 minute. Pour in heavy cream and let it simmer until thickened.
- Return lamb chops to skillet, coating them in the sauce and cook for an additional minute.
- Plate and drizzle with extra sauce before serving.
Notes
To avoid overcooking, aim for an internal temperature of 145°F for medium-rare. Let the chops rest for 5 minutes before serving.
