Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 large cucumber, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh parsley or mint, chopped
- 1 lemon, zested and juiced
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and cook in a pot with water or broth. Bring to boil. Lower heat, cover, and simmer for 15 minutes. Let sit covered for 5 minutes.
- Chop cucumber and herbs, and zest and juice the lemon.
- In a large bowl, combine quinoa, cucumber, herbs, and feta. Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Toss gently to combine and taste, adjust seasoning if necessary.
- Chill for at least 30 minutes before serving.
Notes
Rinse quinoa thoroughly before cooking to eliminate bitterness and avoid over-stirring the salad to maintain texture. Chill before serving to enhance flavors.
