Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 large cucumber, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley or mint, chopped
  • 1 lemon, zested and juiced
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and cook in a pot with water or broth. Bring to boil. Lower heat, cover, and simmer for 15 minutes. Let sit covered for 5 minutes.
  2. Chop cucumber and herbs, and zest and juice the lemon.
  3. In a large bowl, combine quinoa, cucumber, herbs, and feta. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  4. Toss gently to combine and taste, adjust seasoning if necessary.
  5. Chill for at least 30 minutes before serving.

Notes

Rinse quinoa thoroughly before cooking to eliminate bitterness and avoid over-stirring the salad to maintain texture. Chill before serving to enhance flavors.
