Description
A creamy and indulgent dip inspired by the classic baked potato, filled with cheddar cheese, sour cream, and crispy bacon, perfect for gatherings.
Ingredients

- 4 medium russet or Yukon Gold potatoes
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 cup sharp and mild cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the potatoes with a fork.
- Bake the potatoes for about 60 minutes until tender, then let cool slightly.
- Cook the bacon in a skillet until crispy; drain and set aside.
- Scoop the insides of the cooled potatoes into a bowl, mash them, then mix in cream cheese, sour cream, and half of the cheddar cheese until smooth.
- Fold in crumbled bacon and green onions, seasoning with salt and pepper.
- Transfer the mixture to a baking dish and top with remaining cheddar cheese. Bake for 20-25 minutes until bubbly and golden.
- Let it cool slightly before serving with tortilla chips or fresh veggies.
Notes
For a healthier version, swap sour cream for Greek yogurt or omit bacon for sautéed mushrooms.
