Description

A creamy and indulgent dip inspired by the classic baked potato, filled with cheddar cheese, sour cream, and crispy bacon, perfect for gatherings.


Ingredients

  • 4 medium russet or Yukon Gold potatoes
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup sharp and mild cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce the potatoes with a fork.
  2. Bake the potatoes for about 60 minutes until tender, then let cool slightly.
  3. Cook the bacon in a skillet until crispy; drain and set aside.
  4. Scoop the insides of the cooled potatoes into a bowl, mash them, then mix in cream cheese, sour cream, and half of the cheddar cheese until smooth.
  5. Fold in crumbled bacon and green onions, seasoning with salt and pepper.
  6. Transfer the mixture to a baking dish and top with remaining cheddar cheese. Bake for 20-25 minutes until bubbly and golden.
  7. Let it cool slightly before serving with tortilla chips or fresh veggies.

Notes

For a healthier version, swap sour cream for Greek yogurt or omit bacon for sautéed mushrooms.
