Description
A comforting bowl of Loaded Broccoli Cheddar Soup, featuring fresh broccoli, sharp cheddar cheese, and aromatic herbs.
Ingredients
Scale
- 4 cups fresh broccoli florets
- 2 cups sharp cheddar cheese, shredded
- 1 large sweet onion, diced
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt, to taste
- Pepper, to taste
- Chopped parsley or chives, for garnish
Instructions
- Prep the veggies: Wash and chop the broccoli into bite-sized pieces. Dice the onion and mince the garlic.
- Sauté: In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Toss in the minced garlic and sauté for another minute.
- Add the broccoli: Mix in the broccoli and stir for 2-3 minutes.
- Pour the broth: Add the vegetable or chicken broth, covering the broccoli, and bring to a gentle boil.
- Simmer: Lower the heat and simmer for about 15 minutes, until the broccoli is tender.
- Blend: Blend the soup to your desired thickness using an immersion blender.
- Add cream and cheese: Stir in the cream and cheddar cheese gradually, ensuring even melting. Season with salt and pepper.
- Finish with herbs: Add chopped parsley or chives as a final touch.
- Serve: Ladle into bowls and serve hot with crusty bread or crackers.
Notes
For a lighter version, substitute cauliflower for broccoli or use vegan cheese for a plant-based option.
