Ingredients

- 4 cups fresh broccoli, cut into bite-sized pieces
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream or milk
- 2 cups vegetable or chicken broth
- 2 cups sharp cheddar cheese, shredded
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: sautéed mushrooms, thyme, or nutmeg
Instructions
- In a large pot over medium heat, melt the butter. Add onions and sauté until translucent.
- Add garlic and sauté for an additional minute until fragrant.
- Stir in broccoli and any sautéed mushrooms; sauté for 2-3 minutes.
- Pour in broth and bring to a gentle simmer. Cook for 8-10 minutes until broccoli is tender.
- Use an immersion blender to puree the soup to your desired texture.
- Reduce heat and stir in cream or milk gradually; add cheese a handful at a time until melted.
- Season with salt, pepper, and additional herbs as desired.
- Serve in bowls, garnishing with extra cheese or croutons if desired.
Notes
For a thicker soup, mix cornstarch with cold water and stir into the soup. Store leftovers in an airtight container for up to three days.
