Description

A warm and creamy soup filled with fresh broccoli and melted cheddar cheese, perfect for chilly evenings.


Ingredients

  • 4 cups fresh broccoli, cut into bite-sized pieces
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream or milk
  • 2 cups vegetable or chicken broth
  • 2 cups sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: sautéed mushrooms, thyme, or nutmeg

Instructions

  1. In a large pot over medium heat, melt the butter. Add onions and sauté until translucent.
  2. Add garlic and sauté for an additional minute until fragrant.
  3. Stir in broccoli and any sautéed mushrooms; sauté for 2-3 minutes.
  4. Pour in broth and bring to a gentle simmer. Cook for 8-10 minutes until broccoli is tender.
  5. Use an immersion blender to puree the soup to your desired texture.
  6. Reduce heat and stir in cream or milk gradually; add cheese a handful at a time until melted.
  7. Season with salt, pepper, and additional herbs as desired.
  8. Serve in bowls, garnishing with extra cheese or croutons if desired.

Notes

For a thicker soup, mix cornstarch with cold water and stir into the soup. Store leftovers in an airtight container for up to three days.
