- 1 lb boneless chicken breasts or thighs
- 8 oz rotini or penne pasta
- 2 cups fresh broccoli florets
- 1 cup heavy cream or milk
- 1/2 cup grated parmesan cheese
- 1/2 cup shredded cheddar cheese
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh herbs (thyme or basil) optional
Instructions
- Season the chicken with salt and pepper. In a hot skillet, add olive oil and sauté the chicken until golden brown, about 6-7 minutes per side. Remove chicken and let rest.
- Bring a pot of salted water to a boil, add the pasta, and cook according to package instructions until al dente. Save a cup of pasta water before draining.
- In the same skillet, melt butter, then add diced onion and minced garlic. Sauté until translucent and fragrant, about 3-4 minutes.
- Add broccoli florets and sauté for another 2-3 minutes until vibrant.
- Pour in heavy cream and stir to combine with vegetables. Add grated parmesan and some reserved pasta water to achieve desired sauce consistency. Let simmer gently.
- Slice rested chicken and add it to the creamy mixture along with the drained pasta. Toss to coat.
- Taste and adjust salt and pepper. Add fresh herbs if desired.
- Serve hot, garnished with additional cheese and fresh herbs.
Notes
Feel free to use different vegetables or proteins as substitutions. Don’t overcrowd the pan when sautéing for the best flavor.
