Description

A creamy and hearty dish featuring tender chicken, vibrant broccoli, and pasta, perfect for family gatherings and weeknight dinners.


Ingredients

  • 1 lb boneless chicken breasts or thighs
  • 8 oz rotini or penne pasta
  • 2 cups fresh broccoli florets
  • 1 cup heavy cream or milk
  • 1/2 cup grated parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh herbs (thyme or basil) optional

Instructions

  1. Season the chicken with salt and pepper. In a hot skillet, add olive oil and sauté the chicken until golden brown, about 6-7 minutes per side. Remove chicken and let rest.
  2. Bring a pot of salted water to a boil, add the pasta, and cook according to package instructions until al dente. Save a cup of pasta water before draining.
  3. In the same skillet, melt butter, then add diced onion and minced garlic. Sauté until translucent and fragrant, about 3-4 minutes.
  4. Add broccoli florets and sauté for another 2-3 minutes until vibrant.
  5. Pour in heavy cream and stir to combine with vegetables. Add grated parmesan and some reserved pasta water to achieve desired sauce consistency. Let simmer gently.
  6. Slice rested chicken and add it to the creamy mixture along with the drained pasta. Toss to coat.
  7. Taste and adjust salt and pepper. Add fresh herbs if desired.
  8. Serve hot, garnished with additional cheese and fresh herbs.

Notes

Feel free to use different vegetables or proteins as substitutions. Don’t overcrowd the pan when sautéing for the best flavor.
