- 1 acorn squash
- 1/4 cup pure maple syrup
- 1/2 cup pecans, toasted
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons butter (optional)
- 1 teaspoon ground cinnamon or nutmeg (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the acorn squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil generously over the cut surface of the squash.
- Season with salt and pepper, then pour maple syrup into the hollow centers.
- Scatter toasted pecans over the squash, pressing them into the syrup.
- Place the squash cut side up on a baking sheet and roast for 30-40 minutes until tender and caramelized.
- Optional: Add a pat of butter in the last 5-10 minutes of roasting for added richness.
- Let it cool slightly before serving warm.
