Ingredients

  • 1 acorn squash
  • 1/4 cup pure maple syrup
  • 1/2 cup pecans, toasted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter (optional)
  • 1 teaspoon ground cinnamon or nutmeg (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the acorn squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil generously over the cut surface of the squash.
  4. Season with salt and pepper, then pour maple syrup into the hollow centers.
  5. Scatter toasted pecans over the squash, pressing them into the syrup.
  6. Place the squash cut side up on a baking sheet and roast for 30-40 minutes until tender and caramelized.
  7. Optional: Add a pat of butter in the last 5-10 minutes of roasting for added richness.
  8. Let it cool slightly before serving warm.
