Ingredients

- 1 cup mascarpone cheese
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 cup roasted pistachios (crushed)
- 1 cup all-purpose flour (sifted)
- Pinch of salt
- 1/4 cup unsalted butter (softened)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan with butter and line the bottom with parchment paper.
- In a mixing bowl, combine mascarpone cheese and sugar. Whip until smooth and creamy.
- Add eggs, honey, and vanilla extract. Mix until fully incorporated.
- In another bowl, crush pistachios and mix them with flour and salt.
- Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes before removing from the pan, then cool completely on a wire rack.
- Drizzle honey over the top and garnish with leftover crushed pistachios before serving.
Notes
Pairs well with fresh berries or whipped cream. Store leftovers in an airtight container for up to three days.
