- 1/2 cup unsalted butter, softened
- 1 cup fresh blueberries
- 2 tsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 1 cup whole milk
- 1 tsp vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the butter and sugar until light and fluffy (3-5 minutes).
- Add eggs one at a time, mixing well after each addition. Blend in the vanilla extract.
- Alternate adding the dry ingredients and milk to the butter mixture, mixing until just combined.
- Fold in the fresh blueberries gently.
- Pour the batter into the prepared pan and smooth the top. Optionally, dust with a tablespoon of sugar.
- Bake for 25-30 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
- Dust with powdered sugar just before serving.
Notes
Ensure ingredients are at room temperature for the best results. Do not overmix the batter to prevent a dense cake.
