- 3 dried chilies (Ancho, Guajillo, or Chipotle)
- 4 cloves fresh garlic
- 1 large sweet onion
- 1/2 cup vinegar (white or apple cider)
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp black pepper
- 2 tbsp cooking oil (olive or vegetable)
- 1 cup chicken broth
Instructions
- Prepare the Chilies: Remove stems and seeds from dried chilies. Toast in a skillet over medium heat for 2-3 minutes until fragrant.
- Blend the Sauce: In a blender, combine the toasted chilies, garlic, onion, vinegar, and spices with chicken broth. Blend until smooth, adjusting viscosity with more broth as needed.
- Cook the Chicken: Heat oil in the same skillet over medium-high heat. Brown chicken pieces on all sides for about 5-7 minutes.
- Add the Sauce: Pour blended adobo sauce over browned chicken, covering all pieces. Simmer on low for 30-40 minutes until chicken is tender.
- Serve and Enjoy: Remove chicken from heat, let rest briefly. Serve with rice or warm tortillas and garnish with fresh cilantro and lime.
Notes
For enhanced flavor, consider marinating chicken in adobo sauce for a few hours or overnight. Don’t rush browning the chicken for optimal flavor development.
