- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 8 oz dark chocolate, melted
- 1 cup espresso or strong brewed coffee
- 1 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat your oven to 325°F (162°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Bake for 10 minutes and allow to cool.
- In a large bowl, beat the cream cheese until smooth. Gradually add sugar, then mix in the melted chocolate, brewed espresso, and vanilla extract until well combined.
- Add eggs one at a time, mixing gently. Pour the cheesecake filling over the cooled crust.
- Bake for 50-60 minutes until the center is slightly jiggly. Turn off the oven, crack the door, and cool in the oven for 1 hour.
- Cover and refrigerate for at least 4 hours or overnight before serving.
- Run a knife around the edge of the cheesecake before releasing the springform pan. Serve each slice with chocolate sauce or whipped cream.
Notes
Use room temperature ingredients for a smooth mixture. Avoid overbeating for a silky texture.
