Description

A rich and creamy mocha-infused cheesecake with a buttery graham cracker crust, perfect for gatherings and celebrations.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 8 oz dark chocolate, melted
  • 1 cup espresso or strong brewed coffee
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (162°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Bake for 10 minutes and allow to cool.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar, then mix in the melted chocolate, brewed espresso, and vanilla extract until well combined.
  4. Add eggs one at a time, mixing gently. Pour the cheesecake filling over the cooled crust.
  5. Bake for 50-60 minutes until the center is slightly jiggly. Turn off the oven, crack the door, and cool in the oven for 1 hour.
  6. Cover and refrigerate for at least 4 hours or overnight before serving.
  7. Run a knife around the edge of the cheesecake before releasing the springform pan. Serve each slice with chocolate sauce or whipped cream.

Notes

Use room temperature ingredients for a smooth mixture. Avoid overbeating for a silky texture.
