- 1/2 cup granulated sugar
- 1/2 cup sour cream (or Greek yogurt)
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- Fruit toppings (fresh cranberries, strawberries, or chocolate)
Instructions
- Prep your mini cups or muffin tins by lining with paper liners or greasing with cooking spray.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of each cup and chill.
- In a large bowl, beat the cream cheese until smooth. Gradually add sugar, sour cream, and vanilla extract until fluffy.
- Use a piping bag or spoon to fill each crust with the cream cheese mixture. Smooth the tops as desired.
- Chill the filled cheesecakes in the fridge for at least 240 minutes or overnight.
