- 1 tablespoon baking powder
- 1/4 cup granulated sugar
- 1/2 cup unsalted cold butter
- 1 teaspoon chai spice blend (cinnamon, ginger, cardamom, cloves)
- Zest of 1 orange
- 1/4 cup fresh orange juice
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, sugar, and chai spices until well combined.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Gently fold in the orange zest, followed by the cream and orange juice. Mix just until combined but don’t overwork the dough.
- Turn the dough out onto a floured surface and shape it into a round disk about 1 inch thick. Cut into wedges or use a biscuit cutter for round scones.
- Place the scones on the prepared baking sheet. Brush the tops with a little more cream and sprinkle with sugar for a sweet glaze.
- Bake for 15-20 minutes, until they’re golden brown and fragrant.
Notes
Be gentle when mixing the dough; this ensures the scones remain tender. Add a tablespoon of apple cider vinegar to the cream for a subtle tang.
