Ingredients

  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup melted butter
  • 1 cup milk
  • Zest and juice of 1 fresh orange
  • 1½ cups chopped fresh strawberries
  • ½ cup flour (for streusel)
  • ¼ cup brown sugar (for streusel)
  • ¼ cup softened butter (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tins by lining them with paper liners or greasing with butter.
  3. Make the streusel topping by combining ½ cup of flour, ¼ cup of brown sugar, and ¼ cup of softened butter in a medium bowl. Mix until crumbly and set aside.
  4. In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, ½ teaspoon of baking soda, and a pinch of salt.
  5. In another bowl, mix ½ cup of granulated sugar, 2 eggs, ½ cup of melted butter, 1 cup of milk, the zest, and juice of 1 orange until well combined.
  6. Pour the wet ingredients into the dry ingredients and gently fold to combine without overmixing. Fold in 1½ cups of chopped strawberries.
  7. Spoon the batter into the prepared muffin tins, filling each liner about ¾ full. Sprinkle streusel on top of each muffin.
  8. Bake for about 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.

Notes

For a heartier texture, consider substituting half the all-purpose flour with whole wheat flour. You can also experiment with different fruits like blueberries or raspberries.
