Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 carrots, chopped
  • 1 bell pepper, chopped
  • 4 cups chicken or vegetable broth
  • 2 cups spinach
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the ingredients: Chop the onions, garlic, and ginger finely.
  2. Sauté aromatics: In a large pot, heat oil over medium heat, add onions, and sauté until translucent. Then add garlic and ginger.
  3. Add the vegetables: Toss in carrots and bell peppers, sauté until softened, about 5-7 minutes.
  4. Incorporate the broth: Pour in broth, add cumin, turmeric, and black pepper. Bring to a simmer for around 10 minutes.
  5. Introduce the noodles: Add noodles and cook according to package instructions, about 6-8 minutes.
  6. Finish with greens: Fold in spinach and cook until wilted, about 1 minute.
  7. Add lemon and herbs: Stir in lemon juice, parsley, and cilantro.
  8. Serve hot: Ladle into bowls and garnish with more herbs if desired.

Cook the noodles separately if planning to store leftovers to maintain texture.
