Ingredients

- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 2 carrots, chopped
- 1 bell pepper, chopped
- 4 cups chicken or vegetable broth
- 2 cups spinach
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1 tablespoon lemon juice
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon black pepper
Instructions
- Prepare the ingredients: Chop the onions, garlic, and ginger finely.
- Sauté aromatics: In a large pot, heat oil over medium heat, add onions, and sauté until translucent. Then add garlic and ginger.
- Add the vegetables: Toss in carrots and bell peppers, sauté until softened, about 5-7 minutes.
- Incorporate the broth: Pour in broth, add cumin, turmeric, and black pepper. Bring to a simmer for around 10 minutes.
- Introduce the noodles: Add noodles and cook according to package instructions, about 6-8 minutes.
- Finish with greens: Fold in spinach and cook until wilted, about 1 minute.
- Add lemon and herbs: Stir in lemon juice, parsley, and cilantro.
- Serve hot: Ladle into bowls and garnish with more herbs if desired.
Notes
Cook the noodles separately if planning to store leftovers to maintain texture.
