Description

A rich and creamy pistachio cheesecake enhanced with sweet white chocolate, creating a delightful and memorable dessert.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup white chocolate, melted
  • 1 cup roasted and unsalted pistachios, crushed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the graham crackers and mix with melted butter and 2 tbsp of sugar. Press into the bottom of a springform pan and bake for 10 minutes. Allow to cool.
  3. In a bowl, beat cream cheese until smooth. Gradually mix in melted white chocolate, then add sugar, eggs, and vanilla; blend until smooth.
  4. Fold in crushed pistachios, reserving some for topping. Pour filling over cooled crust and smooth the top.
  5. Bake for 45-50 minutes or until the center has a slight jiggle.
  6. Cool in the oven with the door cracked, then refrigerate for at least 4 hours or overnight.
  7. Before serving, garnish with reserved pistachios and optionally drizzle with melted white chocolate or dust with powdered sugar. Slice and serve.

Notes

For a lighter version, use low-fat cream cheese, and for a gluten-free crust, swap in almond flour.
