- 1 cup Unsalted Butter, softened
- 1 ½ cups Granulated Sugar
- 3 large Eggs
- 2 cups All-Purpose Flour
- 1 package (3.4 oz) Pistachio Pudding Mix
- 1 cup Milk
- 1 ½ cups Powdered Sugar
- 8 oz Cream Cheese, softened
- ½ cup Milk (for filling)
- 1 cup Pistachios, chopped
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time.
- In a separate bowl, whisk together flour and pudding mix. Gradually add to the butter mixture, alternating with milk until combined.
- Pour the batter into the prepared dish and bake for 30-35 minutes until a toothpick comes out clean.
- While baking, mix powdered sugar, cream cheese, and milk for the filling. Fold in chopped pistachios.
- Once cooled, create holes in the cake and pour the filling over it. Chill for at least 1 hour.
- Slice into squares and serve.
