Delicious and comforting pumpkin-filled roll-ups perfect for fall breakfasts.
Ingredients

- 8 slices of French or Texas toast
- 1 cup pumpkin puree
- 4 oz cream cheese
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 4 large eggs
- 1 cup milk (whole, almond, or oat)
- 1 tsp vanilla extract
- Butter for frying
Instructions
- In a bowl, combine pumpkin puree, cream cheese, brown sugar, and spices; mix until smooth.
- Trim crusts from bread slices and roll them flat. Place a tablespoon of filling at one end and roll tightly.
- Whisk together eggs, milk, vanilla extract, and a pinch of cinnamon in a shallow dish.
- Melt butter in a skillet over medium heat.
- Dip each roll in the egg mixture, then place seam-side down in the skillet. Cook until golden brown, about 2-3 minutes per side.
- Serve warm with powdered sugar or maple syrup.
Notes
These can be made in advance and stored in the fridge. Reheat in the oven or microwave.
