Ingredients

  • 8 slices of French or Texas toast
  • 1 cup pumpkin puree
  • 4 oz cream cheese
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 4 large eggs
  • 1 cup milk (whole, almond, or oat)
  • 1 tsp vanilla extract
  • Butter for frying

Instructions

  1. In a bowl, combine pumpkin puree, cream cheese, brown sugar, and spices; mix until smooth.
  2. Trim crusts from bread slices and roll them flat. Place a tablespoon of filling at one end and roll tightly.
  3. Whisk together eggs, milk, vanilla extract, and a pinch of cinnamon in a shallow dish.
  4. Melt butter in a skillet over medium heat.
  5. Dip each roll in the egg mixture, then place seam-side down in the skillet. Cook until golden brown, about 2-3 minutes per side.
  6. Serve warm with powdered sugar or maple syrup.

Notes

These can be made in advance and stored in the fridge. Reheat in the oven or microwave.
