- 1 cup heavy cream
- 1/3 cup granulated sugar (or maple syrup/honey for a healthier option)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin or agar-agar (optional)
Instructions
- If using fresh pumpkin, roast it at 375°F until soft, scoop out the flesh, and blend until smooth. Alternatively, use canned pumpkin.
- In a large bowl, whip heavy cream until soft peaks form, adding sugar gradually to avoid deflation.
- In a separate bowl, combine pumpkin puree, vanilla extract, and spices. Mix until fully blended.
- If using gelatin, dissolve in warm water and stir into the pumpkin mixture. For agar-agar, prepare according to instructions.
- Gently fold whipped cream into pumpkin mixture until combined.
- Spoon mousse into serving dishes and refrigerate for at least 4 hours or overnight.
- Garnish with ground cinnamon, whipped cream, or candied pecans before serving.
Notes
Make sure to chill your bowl before whipping cream for better peaks. Be gentle when folding to keep the mousse light and airy.
