  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin or agar-agar (optional)

Instructions

  1. If using fresh pumpkin, roast it at 375°F until soft, scoop out the flesh, and blend until smooth. Alternatively, use canned pumpkin.
  2. In a large bowl, whip heavy cream until soft peaks form, adding sugar gradually to avoid deflation.
  3. In a separate bowl, combine pumpkin puree, vanilla extract, and spices. Mix until fully blended.
  4. If using gelatin, dissolve in warm water and stir into the pumpkin mixture. For agar-agar, prepare according to instructions.
  5. Gently fold whipped cream into pumpkin mixture until combined.
  6. Spoon mousse into serving dishes and refrigerate for at least 4 hours or overnight.
  7. Garnish with ground cinnamon, whipped cream, or candied pecans before serving.
