Ingredients

- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 tsp vanilla extract
Instructions
- Prepare the Pumpkin Puree: If using fresh pumpkin, cut in half, scoop out the seeds, and roast at 350°F (175°C) until tender. Once cool, blend until smooth.
- Whip the Cream: In a large bowl, whisk the heavy cream until soft peaks form. Set aside.
- Mix the Base: In another bowl, beat the eggs with sugar until pale and thick. Stir in the pumpkin puree, spices, and vanilla.
- Combine: Gently fold the whipped cream into the pumpkin mixture.
- Chill: Spoon the mousse into serving dishes and refrigerate for at least two hours.
- Serve: Top with whipped cream, a sprinkle of cinnamon, or toasted pumpkin seeds.
Notes
For a lighter version, substitute half of the heavy cream with Greek yogurt. If you’re looking for a chocolate twist, add melted dark chocolate.
