- 3 ripe bananas
- 2 cups all-purpose flour
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs (or substitutes)

- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- For the frosting: 8 oz cream cheese
- 2 cups powdered sugar
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash the bananas in a bowl until smooth with a few lumps.
- Cream the butter and sugars together until light and fluffy.
- Add eggs one at a time, mixing well, then stir in mashed bananas and vanilla.
- Whisk together flour, baking soda, baking powder, and salt in another bowl, then gradually mix into wet ingredients.
- Pour batter into the prepared loaf pan and bake for 55-65 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- For the frosting, blend cream cheese and powdered sugar until smooth, add milk to achieve desired consistency, and frost generously on the cooled loaf.
Notes
For a dairy-free option, substitute coconut oil for butter and nut-based cream cheese for the frosting.
