- 1 lb corned beef, finely chopped
- 1 cup Swiss cheese, shredded
- 1 cup sauerkraut, rinsed and drained
- 1 cup breadcrumbs (panko recommended)
- 1 large egg, beaten
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine corned beef, Swiss cheese, sauerkraut, breadcrumbs, beaten egg, and spices. Mix well.
- Roll the mixture into balls about the size of a golf ball and place them on a lined baking sheet.
- Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
- Meanwhile, mix together mayonnaise, ketchup, relish, and cayenne pepper for the dressing. Adjust spice to taste.
- Serve hot out of the oven with Spicy Thousand Island dressing for dipping.
