Description

Transform the classic flavors of a Reuben sandwich into fun, bite-sized treats with crispy exteriors and creamy centers, paired with a zesty dressing.

Ingredients

Scale
  • 1 lb corned beef, finely chopped
  • 1 cup Swiss cheese, shredded
  • 1 cup sauerkraut, rinsed and drained
  • 1 cup breadcrumbs (panko recommended)
  • 1 large egg, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine corned beef, Swiss cheese, sauerkraut, breadcrumbs, beaten egg, and spices. Mix well.
  3. Roll the mixture into balls about the size of a golf ball and place them on a lined baking sheet.
  4. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
  5. Meanwhile, mix together mayonnaise, ketchup, relish, and cayenne pepper for the dressing. Adjust spice to taste.
  6. Serve hot out of the oven with Spicy Thousand Island dressing for dipping.

Notes

Ensure the sauerkraut is well-drained to prevent sogginess. For vegetarian options, substitute with mushroom or lentil-based fillings.
