Ingredients

Instructions
- Peel the garlic cloves and mince them in a mortar and pestle or a food processor with a pinch of salt.
- Transfer the minced garlic to a mixing bowl, add the egg yolks, and whisk until combined.
- Gradually drizzle in the olive oil while whisking continuously to create an emulsion.
- Once thickened, incorporate the lemon juice and adjust seasoning with salt and pepper.
- Chill in the fridge for about 30 minutes before serving.

Notes
For a spicy kick, consider adding a pinch of cayenne pepper. If too thick, whisk in a small amount of water to reach desired consistency.
