- 1 lb boneless chicken (breast or thighs)
- 2 cups fresh broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 2 tbsp butter
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp fresh thyme or parsley
- 1 pie crust
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss broccoli with olive oil, salt, and pepper; roast for 15-20 minutes.
- In a skillet, melt butter, sauté onions until translucent, add garlic and chicken; cook until chicken is no longer pink.
- Pour in chicken broth and heavy cream; stir until smooth.
- Fold in roasted broccoli and cheddar cheese; season with herbs, salt, and pepper.
- Roll out pie crust into a dish; pour filling inside.
- Bake for 30-35 minutes until crust is golden brown.
- Let rest for 10 minutes before serving.
Notes
For a lighter version, substitute heavy cream with milk or a non-dairy alternative. Feel free to experiment with different vegetables and cheeses!
