Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 2 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 2 tbsp butter
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme or parsley
  • 1 pie crust
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss broccoli with olive oil, salt, and pepper; roast for 15-20 minutes.
  3. In a skillet, melt butter, sauté onions until translucent, add garlic and chicken; cook until chicken is no longer pink.
  4. Pour in chicken broth and heavy cream; stir until smooth.
  5. Fold in roasted broccoli and cheddar cheese; season with herbs, salt, and pepper.
  6. Roll out pie crust into a dish; pour filling inside.
  7. Bake for 30-35 minutes until crust is golden brown.
  8. Let rest for 10 minutes before serving.

Notes
