- 1 lb boneless chicken (breast or thighs)
- 2 cups fresh broccoli, chopped
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1 frozen pie crust or homemade pastry dough
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat your oven to 400°F (200°C).
- Toss chopped broccoli with olive oil, salt, and pepper, then roast on a baking sheet for about 15 minutes.
- In a skillet, melt butter over medium heat; add diced onions and cook for 3 minutes.
- Add minced garlic and diced chicken; cook until the chicken is no longer pink.
- Pour in the heavy cream, add roasted broccoli, herbs, and cheese. Stir until the cheese melts and mixture thickens slightly.
- Pour the filling into a prepared pie crust, top with another crust, crimp edges and cut slits for steam.
- Bake for 25–30 minutes until golden brown and bubbling. Let cool slightly before serving.
Notes
Ensure the broccoli is not overcrowded while roasting for the best texture. Always taste the filling before sealing the pie.
