Ingredients

- 2 pounds fresh tomatoes (Roma or vine-ripened)
- 1 medium onion, coarsely chopped
- 4 cloves garlic, whole
- 2 tablespoons olive oil
- 4 cups vegetable or chicken broth
- 1 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and core the tomatoes, cut them in half, and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
- Add coarsely chopped onions and whole garlic cloves to the baking sheet.
- Roast in the oven for 25–30 minutes until blistered and golden.
- Once roasted, allow the mixture to cool slightly, then blend until smooth using a blender or immersion blender.
- Pour the blended mixture into a pot and add broth to reach desired consistency. Heat over medium and simmer for about 10 minutes.
- Stir in freshly chopped basil and adjust seasoning with salt and pepper. Serve hot with a drizzle of olive oil.
Notes
Pair the soup with crusty bread or grilled cheese sandwiches for a comforting meal. To make it creamier, stir in a dollop of sour cream or a splash of heavy cream before serving.
