Description

A heartwarming Roasted Tomato Soup made with fresh tomatoes, garlic, and basil, perfect for creating nostalgic memories around the dinner table.


Ingredients

  • 2 pounds fresh tomatoes (Roma or vine-ripened)
  • 1 medium onion, coarsely chopped
  • 4 cloves garlic, whole
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth
  • 1 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and core the tomatoes, cut them in half, and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Add coarsely chopped onions and whole garlic cloves to the baking sheet.
  4. Roast in the oven for 25–30 minutes until blistered and golden.
  5. Once roasted, allow the mixture to cool slightly, then blend until smooth using a blender or immersion blender.
  6. Pour the blended mixture into a pot and add broth to reach desired consistency. Heat over medium and simmer for about 10 minutes.
  7. Stir in freshly chopped basil and adjust seasoning with salt and pepper. Serve hot with a drizzle of olive oil.

Notes

Pair the soup with crusty bread or grilled cheese sandwiches for a comforting meal. To make it creamier, stir in a dollop of sour cream or a splash of heavy cream before serving.
