Description

A tender, flavorful lamb shoulder glazed with rosemary and honey, creating a rich and savory dish perfect for family gatherings.

Ingredients

Scale
  • 1 lamb shoulder (bone-in)
  • 23 sprigs of fresh rosemary, chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil (extra virgin)
  • 2 tablespoons honey or brown sugar
  • 3 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Marinate the lamb by mixing garlic, rosemary, olive oil, honey, balsamic vinegar, salt, and pepper. Rub the marinade over the lamb and marinate in the refrigerator for at least 4 hours or overnight.
  2. Preheat the oven to 325°F (160°C).
  3. Sear the lamb in a heavy, oven-safe skillet over medium-high heat for 3-4 minutes on all sides until browned.
  4. Roast in the preheated oven for 3-4 hours, basting occasionally with pan juices.
  5. Let the lamb rest for 15-20 minutes before carving.
  6. Serve with glaze drizzled over the top and your choice of sides.

Notes

Using a meat thermometer can help ensure that the lamb is cooked to your preference without drying out. Pair with garlic mashed potatoes or roasted vegetables.
