Ingredients

  • 4 medium sweet potatoes
  • 1 lb lean ground turkey
  • 1 cup chopped mushrooms (button or cremini)
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and poke a few holes in them with a fork. Place them on a baking sheet and roast for about 45-60 minutes or until fork-tender.
  2. While the sweet potatoes roast, heat olive oil in a skillet over medium heat. Add minced garlic and diced onions, sautéing until the onions are translucent (about 2-3 minutes).
  3. Add ground turkey to the skillet and cook until browned and cooked through.
  4. Add chopped mushrooms to the turkey mix and cook until tender. Stir in fresh herbs and seasonings.
  5. Once the sweet potatoes are cooked, let them cool slightly. Slice them open lengthwise and fluff the insides with a fork. Fill each potato with the turkey mixture.
  6. If desired, top with cheese and return to the oven for another 10 minutes to melt the cheese.

Notes

You can substitute ground turkey with ground chicken or tofu for a vegetarian option. Add any preferred vegetables to the filling.
