- 4 medium sweet potatoes
- 1 lb lean ground turkey
- 1 cup chopped mushrooms (button or cremini)
- 2 cloves garlic, minced
- 1 onion, diced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and poke a few holes in them with a fork. Place them on a baking sheet and roast for about 45-60 minutes or until fork-tender.
- While the sweet potatoes roast, heat olive oil in a skillet over medium heat. Add minced garlic and diced onions, sautéing until the onions are translucent (about 2-3 minutes).
- Add ground turkey to the skillet and cook until browned and cooked through.
- Add chopped mushrooms to the turkey mix and cook until tender. Stir in fresh herbs and seasonings.
- Once the sweet potatoes are cooked, let them cool slightly. Slice them open lengthwise and fluff the insides with a fork. Fill each potato with the turkey mixture.
- If desired, top with cheese and return to the oven for another 10 minutes to melt the cheese.
Notes
You can substitute ground turkey with ground chicken or tofu for a vegetarian option. Add any preferred vegetables to the filling.
