Ingredients

- 1 lb ground chicken
- 1 cup breadcrumbs (panko or gluten-free)
- 1 large egg
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2 green onions, chopped
- 1 tablespoon sesame oil
- 3 tablespoons soy sauce
- 2 tablespoons honey
- Sesame seeds, for garnish
- Rice of your choice (Jasmine, brown, or cauliflower)
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, minced garlic, grated ginger, chopped green onions, egg, and a splash of soy sauce. Mix gently until just combined.
- Shape the mixture into small balls, about 1 to 1.5 inches in diameter.
- Heat a heavy skillet over medium heat, drizzle in sesame oil, and sear the meatballs on all sides until browned and cooked through, around 8-10 minutes.
- In a separate bowl, whisk together soy sauce, honey, and more sesame oil. Pour over cooked meatballs.
- Cook rice according to package instructions.
- Assemble the bowls with rice, meatballs, and garnish with green onions and sesame seeds.
- Serve hot.
Notes
Experiment with fresh herbs and different rice types to customize your bowls. For a spicy kick, add sriracha or spicy mayo.
