Ingredients

- 1 lb boneless chicken (breast or thighs)
- 4 cups romaine lettuce or baby spinach
- 1 red bell pepper, sliced
- 1 cucumber, sliced
- 1 cup shredded carrots
- 3 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon honey or sugar
- 2 tablespoons toasted sesame seeds
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar or apple cider vinegar
Instructions
- Marinate your chicken in sesame oil, soy sauce, minced garlic, and honey for at least 30 minutes.
- Cook the marinated chicken in a skillet over medium heat until golden and cooked through, about 5–7 minutes.
- Wash and chop the chosen vegetables while the chicken cools.
- In a small bowl, whisk together sesame oil, soy sauce, vinegar, and sweetener to make the dressing.
- In a big bowl, combine the greens, chopped veggies, and warm chicken. Drizzle with dressing and toss gently.
- Sprinkle with toasted sesame seeds and serve on a platter or in individual bowls.
Notes
Feel free to substitute chicken with tofu or shrimp for variation. Keep the dressing separate until serving to maintain crispness of the salad.
