Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 4 cups romaine lettuce or baby spinach
  • 1 red bell pepper, sliced
  • 1 cucumber, sliced
  • 1 cup shredded carrots
  • 3 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or sugar
  • 2 tablespoons toasted sesame seeds
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar or apple cider vinegar

Instructions

  1. Marinate your chicken in sesame oil, soy sauce, minced garlic, and honey for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until golden and cooked through, about 5–7 minutes.
  3. Wash and chop the chosen vegetables while the chicken cools.
  4. In a small bowl, whisk together sesame oil, soy sauce, vinegar, and sweetener to make the dressing.
  5. In a big bowl, combine the greens, chopped veggies, and warm chicken. Drizzle with dressing and toss gently.
  6. Sprinkle with toasted sesame seeds and serve on a platter or in individual bowls.
