- 3 lbs bone-in short ribs
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3 carrots, diced
- 4 cups beef broth
- 2 large potatoes, diced
- 1 cup peas
- 2 tbsp tomato paste
- 1 cup red wine (or additional beef broth)
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp oil for searing
Instructions
- Heat oil in a heavy-bottomed pot over medium-high heat. Season short ribs with salt and pepper, then sear each side until browned. Remove ribs and set aside.
- Add onion, garlic, and carrots to the pot, sauté for 5 minutes until soft.
- Stir in tomato paste, then deglaze the pot with red wine, reducing slightly.
- Return short ribs to the pot, add broth, herbs, and vegetables. Bring to a gentle boil, then reduce heat to low.
- Cover and simmer on low for at least 120 minutes, until the meat is fork-tender.
- Remove herb sprigs before serving. Ladle stew into bowls and enjoy.
Notes
For a vegetarian version, replace short ribs with hearty vegetables or mushrooms, and use vegetable broth.
