Ingredients

  • 3 lbs bone-in short ribs
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 carrots, diced
  • 4 cups beef broth
  • 2 large potatoes, diced
  • 1 cup peas
  • 2 tbsp tomato paste
  • 1 cup red wine (or additional beef broth)
  • 3 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp oil for searing

Instructions

  1. Heat oil in a heavy-bottomed pot over medium-high heat. Season short ribs with salt and pepper, then sear each side until browned. Remove ribs and set aside.
  2. Add onion, garlic, and carrots to the pot, sauté for 5 minutes until soft.
  3. Stir in tomato paste, then deglaze the pot with red wine, reducing slightly.
  4. Return short ribs to the pot, add broth, herbs, and vegetables. Bring to a gentle boil, then reduce heat to low.
  5. Cover and simmer on low for at least 120 minutes, until the meat is fork-tender.
  6. Remove herb sprigs before serving. Ladle stew into bowls and enjoy.

Notes

For a vegetarian version, replace short ribs with hearty vegetables or mushrooms, and use vegetable broth.
