Ingredients

  • 1 lb ground meat (beef, lamb, or turkey)
  • 2 cups diced carrots
  • 1 cup frozen peas
  • 1 cup corn (optional)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef or vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 2 lbs Yukon Gold potatoes, peeled and diced
  • ¼ cup milk
  • ¼ cup butter
  • Salt and pepper to taste
  • Herbs (thyme, rosemary, to taste)

Instructions

  1. In a skillet, sauté onions and garlic over medium heat until fragrant. Add ground meat and cook until browned.
  2. Stir in chopped vegetables and cook for an additional 3-4 minutes.
  3. Pour in the broth and season with salt, pepper, and herbs. Simmer for a few minutes.
  4. Transfer the meat mixture to a slow cooker and spread evenly.
  5. Boil diced potatoes in salted water until tender, then drain and mash with butter, milk, and cheese until smooth.
  6. Spread the cheesy mashed potatoes over the meat mixture in the slow cooker.
  7. Cover and cook on low for 5-6 hours. For a golden top, uncover and cook for an additional 30 minutes if time permits.
  8. Serve and enjoy!
