- 1 lb ground meat (beef, lamb, or turkey)
- 2 cups diced carrots
- 1 cup frozen peas
- 1 cup corn (optional)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef or vegetable broth
- 1 cup sharp cheddar cheese, shredded
- 2 lbs Yukon Gold potatoes, peeled and diced
- ¼ cup milk
- ¼ cup butter
- Salt and pepper to taste
- Herbs (thyme, rosemary, to taste)
Instructions
- In a skillet, sauté onions and garlic over medium heat until fragrant. Add ground meat and cook until browned.
- Stir in chopped vegetables and cook for an additional 3-4 minutes.
- Pour in the broth and season with salt, pepper, and herbs. Simmer for a few minutes.
- Transfer the meat mixture to a slow cooker and spread evenly.
- Boil diced potatoes in salted water until tender, then drain and mash with butter, milk, and cheese until smooth.
- Spread the cheesy mashed potatoes over the meat mixture in the slow cooker.
- Cover and cook on low for 5-6 hours. For a golden top, uncover and cook for an additional 30 minutes if time permits.
