- 1 lb ground beef (80/20)
- 1 cup peas
- 1 cup carrots
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 tsp fresh rosemary, chopped
- 1 tsp fresh thyme
- Salt and pepper, to taste
- 2 cups mashed potatoes
- 1/2 cup cream cheese
- 1 cup shredded cheddar cheese
Instructions
- In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess fat, then stir in the onion and garlic, cooking until translucent.
- Add peas, carrots, and any other desired vegetables. Cook for a few more minutes to blend flavors.
- Stir in beef broth, rosemary, thyme, salt, and pepper. Mix well and let simmer for about 5 minutes.
- Prepare mashed potatoes by boiling peeled potatoes until tender (about 15-20 minutes). Drain and mash with butter and cream cheese until smooth, then mix in shredded cheese until melted.
- Transfer the beef and vegetable mixture to the slow cooker, spread evenly, and top with cheesy mashed potatoes, smoothing out gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until cooked through and the top is golden.
- Let cool for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
For a golden top, finish under the broiler for a few minutes before serving. Avoid over-mashing the potatoes to prevent a gummy texture.
