Ingredients

- 2 lbs beef chuck roast or beef stew meat, cut into bite-sized pieces
- 1.5 lbs baby or small Yukon gold potatoes, halved
- 5 cloves garlic, minced
- 1/2 cup unsalted butter, cubed
- 1 cup beef broth (low-sodium if preferred)
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Salt and pepper to taste
Instructions
- Prep the Ingredients: Cut beef into bite-sized pieces and quarter the potatoes.
- Sear the Beef (Optional): Brown beef in a skillet over medium-high heat for extra flavor.
- Combine All Ingredients: In a slow cooker, add beef, potatoes, garlic, salt, pepper, and beef broth.
- Add the Butter: Dot with butter cubes.
- Cook Low and Slow: Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- Finish and Serve: Stir the mixture and adjust seasoning, cooking uncovered for 30 minutes if sauce needs thickening.
Notes
