Ingredients

- 8 oz button or cremini mushrooms, sliced
- 1 cup beef broth
- 1 medium sweet yellow onion, chopped
- 2 tsp fresh thyme or rosemary (or 1 tsp dried)
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Optional: oil for searing, paprika or chili flakes
Instructions
- Prepare the Beef: Cut your chuck roast into bite-sized cubes and pat dry.
- Sear the Meat (Optional): In a hot skillet, add oil and sear beef until golden.
- Layer Ingredients in Slow Cooker: Place the beef, garlic, mushrooms, onions, and herbs in the slow cooker.
- Add Liquids: Pour in the beef broth and Worcestershire sauce.
- Season: Sprinkle with salt and pepper to taste.
- Cook: Set slow cooker on low for 6-8 hours or high for 3-4 hours.
- Serve: Once tender, serve hot with mashed potatoes or salad.

Searing the meat first enhances flavor. Be careful not to overcrowd the slow cooker.
