Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 4 cloves garlic, minced
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup beef broth
  • 1 medium sweet yellow onion, chopped
  • 2 tsp fresh thyme or rosemary (or 1 tsp dried)
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Optional: oil for searing, paprika or chili flakes

Instructions

  1. Prepare the Beef: Cut your chuck roast into bite-sized cubes and pat dry.
  2. Sear the Meat (Optional): In a hot skillet, add oil and sear beef until golden.
  3. Layer Ingredients in Slow Cooker: Place the beef, garlic, mushrooms, onions, and herbs in the slow cooker.
  4. Add Liquids: Pour in the beef broth and Worcestershire sauce.
  5. Season: Sprinkle with salt and pepper to taste.
  6. Cook: Set slow cooker on low for 6-8 hours or high for 3-4 hours.
  7. Serve: Once tender, serve hot with mashed potatoes or salad.

Notes

Searing the meat first enhances flavor. Be careful not to overcrowd the slow cooker.
